Over this-a way, I made a veggie lasagna: baked zucchini, sauce, ricotta cheese, sauteed red onions + carrots + celery + red bell pepper + mushrooms, topped with shredded mozzarella + smoky provolone. *I* thought it was great but [livejournal.com profile] grindar still gripes about having to eat his vegetables.

FYI, I'm not a Twitter fan but I **ADORE** Fritter~! Tell us what's cookin'! It offers great foodie ideas and feeds my inborn and obsessive need to know what other people are eating. I'm such a curious critter.

I think Grandpa would approve of Fritter. :)

Yep, I just use zucchini or summer squash slices instead of noodles. I guess that makes it more of a layered vegetable casserole than an actual lasagna. :)
